About the producer

Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude. Today Domaines Auriol is a producer as well as a négociant who prides itself in its Occitan roots. Domaines Auriol is also one of the largest producer of Organic wines in the area and has been very proud of its environmental credentials for the past 25 years.

Wine growing / wine making

11ha vineyard located in Jonquières, in the very heart of the Larzac. An ensemble of parcels from the landscape of limestone scree. Fermentation in thermo-regulated stainless steel tanks. Light daily pumping over and light punching down at the end of fermentation. Maturation partly in ovoid cement tanks. Certified organic agriculture.

Tasting notes

Bright, deep, purple colour. Complex nose with blackcurrant, ripe cherries and liquorice. A deep palate with peppery notes and a long, supple, floral finish. Great all round balance of vibrant fruit, spice and freshness.

Food pairing

Merguez sausages with roasted red peppers and tapenade, smoked duck breast, roasted Mediterranean vegetables stuffed with garlic, thyme and rosemary, leg of lamb with rosemary and garlic, truffle omelette.
