About the producer

Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude. Today Domaines Auriol is a producer as well as a négociant who prides itself in its Occitan roots. Domaines Auriol is also one of the largest producer of Organic wines in the area and has been very proud of its environmental credentials for the past 25 years.

Wine growing / wine making

The vines are trained using the fan system for the Merlot and Cordon de Royat for the Grenache Noir. Clay-limestone soils. Harvesting takes place early in the morning to preserve fruitiness. The grapes are destemmed and put into tanks. Alcoholic fermentation starts quickly, around 25°C, then the temperatures are lowered to around 20°C to preserve aroma. Certified organic agriculture.

Tasting notes

Deep purple colour, blackcurrant aromas, and a touch of sweet spice. Rounded with supple tannin. Accessible, mouth-filling, complex and long on the palate.

Food pairing

Tagine with prunes and lamb, roasted duck breast, roasted gammon, ratatouille, lamb burgers.
