About the producer

Based in the heart of the Languedoc in Lezignan-Corbières, Domaines Auriol is a family-owned winery set up in 1995 by Claude Vialade. As the daughter of a former wine estate manager, wine has always been second nature to Claude. Today Domaines Auriol is a producer as well as a négociant who prides itself in its Occitan roots. Domaines Auriol is also one of the largest producer of Organic wines in the area and has been very proud of its environmental credentials for the past 25 years.

Wine growing / wine making

100% Carignan from two vineyards planted between 1907 and 1920 according to land registry records. The vines are situated on distinctive terraced sites. They are trained as bush vines, producing 3 or 4 clusters per vine where air flow and exposure to sunshine are maximised. The fruit is picked by hand with yields no higher than 25 hl per hectare. Part of the crop is macerated as whole clusters (70%).

Tasting notes

Complex aromatic notes. On the palate it is wonderfully full, with aromas of blackberry jelly, plums, figs, cranberries, wild thyme and mild tobacco. A long, fresh palate and elegant tannins. This is a unique wine.

Food pairing

Smoked ham, slow-roasted pork shoulder, thyme-infused goats cheese, herbs and spices such as cumin, coriander seeds, rosemary and za’atar, duck rillettes, Christmas turkey.
